Grated Egg Avocado Toast

Ingredients

  • 1 slice crusty bread, toasted
  • 1 tablespoon kewpie mayonnaise
  • ½ small avocado, sliced thin
  • 1 hardboiled egg, grated
  • ½ teaspoon sriracha
  • Pinch salt
  • Pinch black pepper

Equipment

  • 1 cutting board
  • 1 paddle microplane grater

Instructions 

  • Toast one slice of crusty bread.
  • Add a layer of kewpie mayo.
  • Add the sliced avocado on top of the kewpie mayo.
  • Use your microplane grater to shave the egg on top of the avocado.
  • Season with salt, pepper and a few dots of sriracha.
