Sticky Salmon Bites with Wasabi Soy Mayonnaise

Ingredients

Salmon

  • 1.5 lbs. salmon, skin on, cubed

Marinade - Use half to marinate the salmon and reserve half in a separate container for the sauce later

  • ¼ cup soy sauce, low sodium
  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon avocado oil
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons garlic, minced, about 3-4 cloves
  • 2 teaspoons ginger, fresh ginger, peeled and finely diced

Wasabi Soy Mayonnaise

  • ¼ cup kewpie mayonnaise
  • 1 tablespoon soy sauce, low sodium
  • ½-1 tablespoon wasabi paste, I used 1 tablespoon but it is spicy
  • ¼ teaspoon salt
  • 1 teaspoon warm water

Garnish

  • ½ tablespoon sesame seeds
  • 2 tablespoons green onion, chopped small

Equipment

  • 1 large non-stick pan
  • 2 mixing bowls

Instructions 

Make the Wasabi Soy Mayonnaise

  • Combine the kewpie mayonnaise, wasabi paste, low sodium soy sauce, salt and warm water in a bowl. Whisk until well combined. Cover and refrigerate until ready to use.

Prep the Salmon and Make the Marinade

  • Remove and pin bones from the salmon filet and cube it with the skin on. Cube it into bite sized pieces and place it in a glass bowl. It is important to leave the SKIN ON. This help prevent the salmon from flaking apart in the pan.
    In a separate mixing bowl, combine the low sodium soy sauce, light brown sugar, minced garlic, finely diced ginger, and salt. Mix until well combined.
    Use half of the marinade to coat the salmon bites, and reserve the second half of the marinade to be used as a sauce later. Cover with saran wrap and refrigerate for 30 minutes.

Sear the Salmon

  • Remove the salmon from the refrigerator and let it rest for 15 minutes at room temp. Heat a large non-stick pan over medium high heat. Add avocado oil to the pan. Once the oil is hot, add the cubed salmon. Sear each side for 1-2 minutes or until it is cooked to your liking. Remove the salmon from the pan.
    ** You might need to sear the salmon in batches so you do not overcrowd the pan.**
    Once all the salmon is seared, add the reserved marinade to the hot pan and combine it with cornstarch slurry. (Which is 2-3 tablespoons water + 1 teaspoon cornstarch, mix before adding). Whisk well over low heat until a sticky sauce forms. Once reduced to your liking, drizzle the sauce over the fish.
  • Top it with sesame seeds, chopped scallions and a drizzle of the wasabi soy mayonnaise. Serve and enjoy!
