  • 5 lbs. russet potatoes, or Yukon Gold, wash, dry, peel and cube
  • 1 cup heavy cream, or whole milk
  • 8 tablespoons salted butter, reserve 2 tablespoons for the top of the hot potatoes
  • ¼ cup sour cream
  • 2 teaspoons salt
  • 2 tablespoons chives, chopped small plus extra as garnish
  • ½ teaspoon cracked black pepper

  • potato peeler
  • potato ricer
  • pot to boil the potatoes
  • colander to drain the potatoes
  • large mixing bowl
  • serving bowl

  • Wash, peel, and cube the potatoes.
  • Add them to a pot and cover them with water.
  • Bring the water to a boil and cook for 10-12 minutes or until the potatoes are fork tender.
  • While the potatoes are boiling, add 6 tablespoons of butter, 1 cup heavy cream and 2 teaspoons of salt to a small saucepan. Simmer until warmed through, but not too hot. Set aside.
  • Drain off the water using a colander and begin ricing the potatoes. See above for details.
  • Once the potatoes have been run through the ricer, add the sour cream, and half of the warm melted butter and heavy cream mixture.
  • Use a spatula to fold everything together. Slowly add the rest of the warm butter and cream mixture until smooth.
  • Do not overwork the potatoes. Season with salt, pepper, and chives.
  • Serve warm.
