Tahini Dressing

  • ¼ cup tahini, Joyva
  • 2.5 tablespoons lemon juice, fresh squeezed
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon soy sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup warm water

  • In a liquid measuring cup, combine the tahini, lemon juice, olive oil, maple syrup, soy sauce, Dijon mustard, salt and a few turns of cracked black pepper. Stir well. Do not worry if the mixture seizes up, the water will smooth it out.
  • Slowly add your water until the dressing is smooth and creamy. More water gives you a thinner dressing. Less water makes it thicker.
