Kale and White Bean Soup

Ingredients

Soup:

  • 2 tablespoons olive oil
  • 1 medium sweet onion, about 1 cup, diced small
  • 3 cloves garlic, minced
  • 2 stalks celery, about 1 cup, diced small
  • 1 can white beans, rinsed and drained
  • 2.5 cups kale, wash the kale, remove the stems, and chop small, pack into the measuring cup
  • 4 cups chicken broth, low sodium
  • 1 chicken bouillon cube, for extra flavor
  • salt and pepper, to taste

Optional Toppings

  • grated parmesan cheese
  • red pepper flakes
  • fresh chopped Italian parsley

Equipment

  • 1 soup pot
  • 1 can opener

Instructions 

  • In a large soup pot over medium heat, add the olive oil. Saute the sweet onions, celery and garlic until tender. Season with salt and black pepper.
  • Once the onions are translucent and the garlic is fragrant, add the chicken broth and optional bouillon cube. Stir well.
  • Next, you'll add the white beans and prepared kale. Simmer over medium low heat. Taste for seasoning, and top with grated parmesan, red pepper flakes and parsley.
