Copycat Gobblerito

Ingredients

Gobblerito

  • 1 large flour tortilla
  • 2 pieces turkey, sliced thin
  • ¼ cup stuffing
  • ¼ cup candied sweet potatoes
  • ¼ cup cranberry sauce

Homemade Gravy

  • 2 tablespoons butter
  • 1 tablespoon AP flour, all purpose
  • 1 teaspoon garlic, minced
  • ½ cup 2% milk
  • cup chicken stock
  • 1.5 tablespoons soy sauce

Equipment

  • cast iron skillet
  • sauce pot

Instructions 

Make the gravy:

  • In a small sauce pot, combine your butter and garlic. Let it begin to brown before adding the AP flour.
  • Add the AP flour and form a roux. Once the flour begins to bubble, slowly add your milk, chicken stock and soy sauce. Stir well. Simmer over low heat.
  • Spray a cast iron skillet with cooking spray. Place it over low heat.

Assemble the Gobblerito:

  • Lay the tortilla on a flat surface.
  • Layer the sliced turkey, stuffing, sweet potatoes and cranberry sauce. Make sure not to fill it too much or you will not be able to close the Gobblerito.
  • Once the tortilla is filled, take the end of the tortilla and fold it over the top of the filling.
  • Tuck in the sides and continue rolling the tortilla closed.
  • Next, add the Gobblerito to the cast-iron skillet and allow the Gobblerito to heat through. You will also get a nice light brown sear on the outside.
  • Once heated, pour the homemade gravy over the Gobblerito.
  • Top with extra cranberry sauce and enjoy!
