Candied Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes, peeled and sliced 1/2-inch thick
  • ½ cup salted butter, 1 stick
  • ½ cup light brown sugar, packed
  • ¼ cup maple syrup
  • 2 tablespoons water
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

Equipment

  • 1 9x13 inch baking dish
  • 1 pot
  • 1 peeler

Instructions 

  • Preheat the oven to 400 degrees. Peel your sweet potatoes and slice them into ½-inch thick rounds.
  • Spray a 9x13-inch glass baking dish with cooking spray and line it with the potatoes. You will have some overlap, which is fine.
  • In a small pot over medium heat, combine butter, light brown sugar, cinnamon, nutmeg, vanilla, maple syrup and water. Stir until well combined. Pour the sauce over the potatoes making sure they are well coated.
  • Bake uncovered at 400 degrees for 15 minutes. Reduce the heat to 375 degrees and bake for another 35-40 minutes or until the potatoes are fork tender. Be sure to toss the potatoes around in the sauce half way through baking this will help ensure they get caramelized. Total cooking time is 50-55 minutes.
    Option to broil for 1-2 minutes for a slightly crispy top! Remove from the oven and serve. Be sure to spoon some of the sauce over the potatoes!
