Five Ingredient, Frozen Yogurt Breakfast Bars (cereal bars)

Perfect for breakfast or a healthy mid-day snack, these five-ingredient, frozen yogurt breakfast bars are absolutely fire! The high protein, low sugar cinnamon cereal is coated with creamy peanut butter and honey. The crunchy cereal base is quickly frozen, then topped with cinnamon and vanilla high protein yogurt. Freeze once more and you’ll have the perfect breakfast bars. Option to top with fresh fruit.

Ingredients

  • 3.5 cups cinnamon cereal, Special K Zero Cinnamon
  • ½ cup peanut butter
  • ¼ cup honey
  • 2 cups vanilla yogurt, Oikos PRO yogurt
  • ¼ - ½ teaspoon cinnamon, depending on preferred level of cinnamon flavor

  • 1 8x8 baking pan
  • 2 mixing bowls

Instructions 

How to Make Frozen Yogurt Breakfast Bars (cereal bars)

  • Line an 8x8-inch metal baking pan or silicone pan with parchment paper.
    Combine the cereal, soft peanut butter, and honey in a mixing bowl. Mix until well coated. Add the mixture to the prepared baking dish. Press the mixture firmly into the bottom of the pan using a small piece of parchment. You want the cereal spread out evenly. Freeze for 20 minutes.
  • Next, combine the Oikos vanilla yogurt with the cinnamon. Mix well. Pour this mixture over the frozen cereal base. Spread evenly, cover and freeze for 60-75 minutes for semi-frozen yogurt. Freeze overnight for completely frozen bars. Completely frozen bars will need a few minutes to thaw before enjoying.
    Use a sharp knife to cut your bars into evenly sized pieces. Option to top your bars with fresh sliced banana and a drizzle of melted peanut butter or honey. Makes 9 bars.
