Make the Dressing
Combine, olive oil, fresh squeezed lemon juice, honey, Dijon mustard, salt and black pepper in a small mixing bowl. Mix well.
Assemble the Salad
Trim the stems from the kale, then wash the baby spinach and kale. Pat your greens dry with a clean towel or a paper towel. Option to use a salad spinner if you have one handy. Warm the walnuts in a small non-stick skillet until they are nutty and fragrant. Remove them from the heat and let them cool. Add the greens to a large bowl. Top with crushed walnuts, clean blueberries, diced avocado and thinly sliced red onion. Drizzle the salad with as much or as little dressing. Toss well and enjoy!
