This grilled cilantro lime chicken with mango salsa is a weeknight win. The chicken is marinated in a simple combination of fresh lime juice, avocado oil, honey, garlic, salt and fresh cilantro.
How to Make Grilled Cilantro Lime Chicken with Mango Salsa
Marinate the Chicken
Butterfly the chicken breasts and set them aside. Combine avocado oil, fresh cilantro, fresh squeezed lime juice, honey, diced garlic, and salt in a glass mixing bowl. Add the chicken cutlets and toss until they are well coated. Cover and refrigerate for 30 minutes.
Make the Mango Salsa
Combine diced mango, diced red onion, diced jalapeno, diced red bell pepper, fresh squeezed lime juice, salt and fresh cilantro. Gently toss everything together until its well combined. Cover and refrigerate until you’re ready to use it.
Grill the Chicken
Preheat the grill to 400-450 degrees. Brush the grates with avocado oil. Add the marinated chicken cutlets to the hot grill. Cook for 5-6 minutes per side or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. Remove from the grill. Top with mango and serve with fresh lime wedges and sliced avocado. Enjoy.
