Asian Inspired Roasted Broccoli with Spicy Peanut Sauce

This Asian inspired roasted broccoli with spicy peanut sauce is a weeknight win! The entire dish comes together in under 30 minutes and tastes amazing.
Preheat the oven to 425 degrees.
Line a baking tray with parchment paper and set it aside. Clean and trim your broccoli leaving the stems intact.
Add the broccoli to the baking tray and drizzle it with olive oil, salt and cracked black pepper.
Roast for 25-30 minutes or until the broccoli is lightly charred and tender. I like my broccoli slightly firm and crispy, so I roasted mine for 25ish minutes.
While the broccoli is roasting, combine the spicy peanut sauce. Which includes, creamy peanut butter, maple syrup, sriracha, low sodium soy sauce, rice vinegar and warm water. Mix until well combined.
Remove the broccoli form the oven and top it with the spicy peanut sauce, sesame seeds, chopped scallions and crushed peanuts. Add a squeeze of fresh lime and serve with extra lime wedges. Enjoy.
