Shaved Cabbage Salad with Tahini Dressing

Ingredients

Green Cabbage

  • ½ head green cabbage, shaved thin, about 3 cups

Tahini Dressing

  • ¼ cup tahini, mix well before using
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 1.5 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • 2-4 tablespoons warm water

Garnish

  • 1-2 teaspoons sesame seeds

Equipment

  • 1 mandolin
  • 1 large mixing bowl
  • 1 small mixing bowl

Instructions 

  • Thinly shave about a ½ head of raw green cabbage, add it to a bowl.
  • In a small mixing bowl, combine tahini, olive oil, honey, apple cider vinegar, Dijon mustard, salt and warm water. Whisk until well combined.
  • Pour the dressing over the shaved cabbage. Top with sesame seeds and enjoy.
