Pan Roasted Honey Lime Chicken Thighs

Simple, easy and delicious, these pan roasted honey lime chicken thighs are the perfect weeknight meal. This entire recipe comes together in under 30 minutes and tastes incredible.
Preheat the oven to 400 degrees.
Combine fresh squeezed lime juice, low sodium soy sauce, minced garlic and honey in a small mixing bowl.
Add the boneless, skinless chicken thighs to a sealable bag or to a bowl that can be covered with a lid.
Pour the marinade over the thighs and toss the chicken until its well coated. Cover and refrigerate for 15-20 minutes.
Remove the chicken from the refrigerator and allow it to rest for 5-10 minutes.
Heat an oven safe pan over medium high heat and add the avocado oil.
Add the marinated boneless skinless thighs to the pan and allow them to get a nice brown sear on each side. About 2-4 minutes per side.
Reduce the heat and add the remaining marinade to the pan. Bring to a simmer for 1-2 minutes.
Place the pan in the oven for 15-20 minutes or until the chicken reaches an internal temperature of 165 degrees. Cooking time will vary based on the thickness of the chicken thighs. Thicker thighs will need more time, while smaller thighs will require less cooking time.
Add the thighs and sauce to a serving platter. Top with chopped green onion and cilantro. Serve hot.
