Hot Honey Sweet Potatoes

Ingredients

  • 2-3 large sweet potatoes, washed and cubed, option to leave the skin on
  • ¼ cup hot honey, Signature Select brand preferably
  • 3 tablespoons unsalted butter
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon salt

Equipment

  • 1 baking tray
  • 1 saucepan

Instructions 

  • Preheat the oven to 425 degrees.
  • Spray a baking tray with olive oil cooking spray.
  • Wash the sweet potatoes and cube them. About 1-cubic inch.
  • Add them to the prepared baking tray. Gently spray them with olive oil cooking spray.
  • Place them in the oven for 25-30 minutes. Turn halfway through.
  • While roasting, grab a small saucepan and add the butter, hot honey, apple cider vinegar and salt. Mix until well combined and fully melted. Remove from the heat.
  • Remove the potatoes from the oven.
  • Drizzle the hot honey sauce over everything. Toss until the potatoes as well coated on all sides. Reduce the heat to 350.
  • Place them back in the oven for 8-10 minutes or until they are fork tender.
  • Remove them from the oven, plate them and top them with cracked black pepper and freshly chopped parsley.
