Grated Halloumi Breakfast Tacos

These grated halloumi breakfast tacos are dangerously addicting. Once grated, the halloumi fries in the pan forming a perfectly crispy layer of cheese.

Ingredients

  • 2 tortillas, heated
  • 2 eggs, one per taco
  • 1-2 ounces halloumi, grated
  • ½ avocado, divided between tacos
  • ¼ cup pea shoots, divided between tacos
  • 1 tablespoon hot sauce, divided between tacos

Equipment

  • 1 9-inch non-stick skillet
  • 1 microplane grater

Instructions 

  • Grab a 9-inch non-stick skillet and place it over medium heat.
  • Use a microplane grater and grate a thin layer of halloumi on the bottom of the pan.
  • Once it begins to lightly brown, crack one egg over the halloumi.
  • Option to cover the pan with a lid to cook the egg.
  • Or, once the egg sets and the halloumi is crispy, carefully flip it with a spatula to cook the other side.
  • Place the crispy fried halloumi and egg on a heated tortilla.
