Caramelized Onion Blackened Chicken

Ingredients

  • 1 lb. chicken breasts, Smart Chicken butterflied
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper

Onions

  • 2-3 medium sweet onions, peeled and sliced
  • 1 tablespoon olive oil
  • ¼ teaspoon black pepper

Cheese / Garnish

  • 4 slices provolone cheese
  • 1 tablespoon Italian parsley

Equipment

  • 2 9-inch non-stick skillets

Instructions 

  • Add olive oil to a non-stick skillet over medium heat. Add the sliced onions and sauté until tender. Season with a few turns of cracked black pepper. Remove from the heat and set aside.
  • Cut your chicken breasts into four thin cutlets. Toss them with the blackening spice. Make sure they’re well coated. Heat a non-stick skillet, add butter and olive oil. Once hot, add the seasoned chicken. Cook for 5-6 minutes per side or until cooked through. Top the chicken with the sautéed onions and provolone cheese. Add a touch of water to the pan. The steam will help melt the cheese.
    Top with freshly chopped Italian parsley. Enjoy.
