Enjoy these simple cottage cheese protein bowls for breakfast or dinner. This easy to make recipe is jam packed with protein leaving you feeling full and satisfied.
Cut your strawberries into small, easy to eat pieces and add them to a mixing bowl.
Next, add maple syrup, balsamic vinegar, black pepper, and salt. Toss well.
Let the strawberries marinate for 15-20 minutes.
In a separate mixing bowl, combine arugula, olive oil, lemon juice, and a pinch of salt. Toss together.
Build the Bowls
Add a handful of the dressed arugula to the bottom of the bowl.
Top it with the cottage cheese and a spoonful or two of the macerated strawberries.
Finish it with some fresh basil and a turn of cracked black pepper.
