Steak Egg and Cheese Burrito

This steak egg and cheese burrito is the ultimate way to start your day. Loaded with thinly shaved beef, fluffy scrambled eggs, cheese, vegetables and the most delicious spicy yogurt sauce, I can guarantee this recipe will be on repeat in no time.
Steak Egg and Cheese Burrito
In a small mixing bowl, combine the Greek yogurt, fresh squeezed lime juice, hot sauce, salt and pepper. Mix well and set aside.
Grab a non-stick skillet and spray it with olive oil cooking spray.
Add the sliced onions and red bell peppers.
Sauté over medium heat for 5-6 minutes then push the veggies to one side of the pan and add the shaved beef to the other side of the same pan.
Season with salt and pepper.
Sauté until the beef is cooked through and lightly browned.
In a second non-stick skillet, add one tablespoon of butter.
Once melted, pour in the whisked eggs. Cook the eggs to your liking and top with shredded mozzarella.
Assemble the burritos:
Gently heat your tortillas so they are pliable and begin building your burritos one at a time.
Add a layer of peppers and onions.
Followed by half of the shaved beef.
Next, add some of the cheesy egg and shaved iceberg lettuce.
Roll the burrito, making sure it is sealed tightly.
Heat the remaining butter in a clean pan and place the burrito in the pan to get a crispy sear on the outside.
Remove the burrito from the pan, top it with the spicy yogurt sauce, fresh cilantro, and diced jalapeno. Serve with a wedge of fresh lime.
