Make the Wasabi Soy Mayonnaise
Combine the kewpie mayonnaise, wasabi paste, low sodium soy sauce, salt and warm water in a bowl. Whisk until well combined. Cover and refrigerate until ready to use.
Prep the Salmon and Make the Marinade
Remove and pin bones from the salmon filet and cube it with the skin on. Cube it into bite sized pieces and place it in a glass bowl. It is important to leave the SKIN ON. This help prevent the salmon from flaking apart in the pan. In a separate mixing bowl, combine the low sodium soy sauce, light brown sugar, minced garlic, finely diced ginger, and salt. Mix until well combined. Use half of the marinade to coat the salmon bites, and reserve the second half of the marinade to be used as a sauce later. Cover with saran wrap and refrigerate for 30 minutes.
