Spinach Artichoke Chicken Burgers

Light, juicy, and delicious these spinach artichoke chicken burgers are insanely good. Topped with a dollop of homemade tzatziki, this chicken burger recipe is summer in a bun.

Ingredients

Spinach Artichoke Chicken Burgers

  • 1 lb. ground chicken
  • 1 large egg
  • 1.5 teaspoons garlic , minced, about 2 small cloves
  • 1 tablespoon olive oil
  • 1/4 cup shallots, diced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup parmesan cheese, grated
  • 3/4 cup baby spinach , chopped small
  • 3/4 cup artichoke hearts , about 3 large hearts drain off as much liquid as possible, chop small.
  • 1/2 teaspoon salt

Equipment

  • 11-inch non-stick skillet
  • large mixing bowl

Instructions 

  • In a large bowl combine, ground chicken, egg, minced garlic, olive oil, diced shallots, panko breadcrumbs, parmesan cheese, chopped fresh spinach, chopped artichoke hearts, and salt.
  • Mix until well combined.
  • Form the ground chicken mixture into patties. I was able to get seven large patties from this mix.
  • Spray an 11-inch non-stick pan with cooking spray.
  • Place the pan over medium heat. Cook the burgers for 6-7 minutes on each side, or until the internal temp is 165. The cooking time will depend on how thick your burgers are. Thinner burgers may cook more quickly.
  • Once the burgers are cooked through, add them to a bun and top them with your favorite toppings.
  • Serve warm and enjoy!
