Ingredients

  • 1.5 cups whole grain rolled oats
  • 2 large eggs
  • 4 ounces sweetened applesauce, 1/2 cup sweetened
  • ¼ cup almond butter
  • ¼ cup 2% milk, you can use almond milk for dairy free
  • 2 tablespoons maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ cup dark chocolate chips

Equipment

  • blender
  • 8x8-inch ceramic baking dish

Instructions 

  • Preheat the oven to 350 degrees.
  • Spray an 8x8-inch ceramic baking dish with baking spray. Set it aside.
  • Add the oats, eggs, applesauce, almond butter, milk, maple syrup, baking soda, vanilla flavor, and cinnamon to the blender.
  • Blend on low to medium until a batter begins to form.
  • Pour the batter into the prepared baking dish.
  • Top with chocolate chunks.
  • Bake for 22-23 minutes or until the center is cooked through.
  • Remove from the oven and cool on a baking rack for 20 minutes before slicing.
  • Store covered on the countertop for up to 3 days. Option to freeze these bars as well.
