Need a quick and delicious breakfast that the entire family will love? Try my blender almond butter baked oatmeal bars. They’re healthy, light, and easy to make.
Preheat the oven to 350 degrees.
Spray an 8x8-inch ceramic baking dish with baking spray. Set it aside.
Add the oats, eggs, applesauce, almond butter, milk, maple syrup, baking soda, vanilla flavor, and cinnamon to the blender.
Blend on low to medium until a batter begins to form.
Pour the batter into the prepared baking dish.
Top with chocolate chunks.
Bake for 22-23 minutes or until the center is cooked through.
Remove from the oven and cool on a baking rack for 20 minutes before slicing.
Store covered on the countertop for up to 3 days. Option to freeze these bars as well.
