Tajin Watermelon and Whipped Feta Salad
Too hot for the oven? I’ve got you covered! This Tajin watermelon and whipped feta salad is the perfect summer salad recipe. The juicy watermelon tastes amazing with the Tajin spice blend, seasonal vegetables and whipped feta cheese. While this combination may sound odd, trust me it’s so flavorful and refreshing.

If you’re not familiar with Tajin spice, it’s a combination of chili peppers, salt and dehydrated lime juice. The spice level is mild, but the flavor is incredible. Pair this with the tangy whipped feta cheese and the seasonal summer vegetables and this salad is a totally satisfying.
This Tajin watermelon and whipped feta salad recipe is light, delicious and easy to make. Loaded with fiber, this salad recipe can easily double as your main dinner meal. However, if you’re looking for more protein try serving this salad along side of my juicy chicken platter. You can also enjoy it along side or my easy fish tacos too. The fish is blackened so it will taste great with this Tajin watermelon salad. Layered with loads of tasty toppings, this salad will quickly become a family favorite.
Finally, I cut the watermelon into rectangles to give it more of a watermelon “steak” feel. However, you can cut it anyway you like. Just be sure to remove the rind so you do not bite into it.
Storage
Store any leftover Tajin watermelon salad in an airtight container in the refrigerator for one maybe two days. The salt from the Tajin will draw out all of the moisture form the watermelon making it soggy. So, it’s best to enjoy it the same day. Need a cool and refreshing dessert? Tajin Watermelon and Whipped Feta Salad
Ingredients
- 1 small seedless watermelon
- 5 ounces feta cheese
- ½ cup whipped cream cheese
- 1 ripe lime, sliced thin
- ¼ cup jalapeno , sliced thin
- 2 ears sweet corn , grilled and removed from the cobb
- 2 teaspoons Tajin spice, add to your liking
- 1 tablespoon olive oil
- 1 cup cucumber, sliced thin
- ½ cup avocado, sliced thin and removed from the skin
- ¼ cup scallions, as garnish
- 2 tablespoons cilantro , chopped fresh and sprinkled over the top

Instructions
Slice the watermelon:
- Slice the ends off of the watermelon and set it upright. Carefully slice the rind off.
- Cut the watermelon into thirds.
- Then, slice the third into evenly sized rectangles. Set aside.
Prepare the whipped feta and vegetables
- Next, you will grill your corn and remove the kernels from the cobb. Set aside.
- In a food processor add the feta cheese and whipped cream cheese. Blend for 4-5 minutes until creamy and smooth, no lumps. Set aside.
- Slice your cucumber, lime, and jalapeno in thin slices. Set aside.
Assemble the dish:
- Grab a serving platter and spread about 2/3 of the whipped feta on the bottom of the platter.
- Next, you’ll add the watermelon rectangles.
- Drizzle the watermelon with the olive oil.
- Then, you’ll begin to layer the cucumber, jalapeno and lime slices, making sure to spread them across the entire platter.
- Add the remaining whipped feta to the dish. I used a spoon to make small dollops over the fruit and vegetables.
- Top everything with the grilled corn kernels, sliced avocado, and chopped fresh scallions.
- Sprinkle the tajin spice over the entire dish.
- Serve immediately and enjoy!

I am not a huge feta fan, but this salad is a perfect salty, sweet combination. I made this for a get together I was having with some friends and we all kept going back for more!
This recipe looks like something you order at a restaurant, but it is so easy to make. I would have never thought of something like this. It’s so good!
