Ingredients Needed for Strawberry Thyme Lemonade
Lemons – You’ll need about 8-9 lemons for this recipe to yield 1.5 cups of fresh lemon juice.
Water – You’ll need about 6-7 cups of water for this recipe.
Thyme Simple Syrup – Making thyme simple syrup is a great way to incorporate sweetness into this lemonade without granny sugar floating around. Simply bring water and cane sugar to a light boil in a pot. Add the fresh thyme, turn off the heat and let it steep for about 10 minutes.
Strawberry Puree – Combine fresh strawberries, lemon zest, lemon juice, cane sugar and water in a small pot. Once the berries are soft, turn off the heat and buzz in a blender until smooth. Set aside.
How to Make Strawberry Thyme Lemonade
Step One – Thyme Simple Syrup
Combine water and cane sugar in a small saucepan. Bring to a boil, add the fresh thyme and turn off the heat. Let the thyme steep for 10-15 minutes.
Step Two – Strawberry Puree
Add strawberries, lemon zest, lemon juice, water and cane sugar to a small saucepan. Bring to a light boil. Once the strawberries are soft, add the mixture to a blender to buzz until smooth. Set aside.
Step Three – Lemonade
Squeeze 1.5 cups of fresh lemon juice. Remove seeds and pulp.
Measure our water.
Step Four – Assemble
Add ice to a pitcher, add the lemon juice and simple syrup to taste.
Then, add water and stir well.
Next, add some strawberry puree. Stir well.
Serve chilled over ice with a sprig of thyme as garnish.
Storage
Store the lemonade in a covered pitcher in the refrigerator for five to six days. Any extra thyme simple syrup or strawberry puree can be stored separately in covered containers in the refrigerator. Simple syrup will last up to a week or two. The strawberry puree will last two to three days.
