Spinach Artichoke Chicken Burgers- Healthyish Foods

For this chicken burger recipe, I chopped fresh spinach into very small pieces and added it to the ground chicken mix. It’s the perfect way to sneak healthy veggies into your family’s diet. Next, I added chopped artichoke hearts. First, drain off any excess liquid so that it won’t make the ground chicken mix too wet. Then, chop the hearts into small pieces about the size of a pinky nail. This way, when you bite into the burger you get a small juicy piece of artichoke. It’s delicious!

Topping suggestions

As far as toppings go, I suggest using my homemade tzatziki sauce. The creamy yogurt, fresh dill and crunchy cucumbers tastes so good with the spinach and artichokes. What I love most about this recipe is that there are so many Mediterranean flavors packed into one small sandwich. It’s awesome how they all complement each other so well. I can guarantee that you will be making this chicken burger recipe all summer long.

Other toppings you could add that would taste great are, sliced tomatoes, cucumbers, white cheddar cheese, and lettuce. If you do not add the tzatziki, mayonnaise would taste yummy too. There really isn’t any wrong answer when it comes to adding toppings. In my opinion, there can never be enough.

  • 1/2 teaspoon salt

Equipment

  • 11-inch non-stick skillet

Instructions

  • In a large bowl combine, ground chicken, egg, minced garlic, olive oil, diced shallots, panko breadcrumbs, parmesan cheese, chopped fresh spinach, chopped artichoke hearts, and salt.
  • Mix until well combined.
  • Form the ground chicken mixture into patties. I was able to get seven large patties from this mix.
  • Spray an 11-inch non-stick pan with cooking spray.
  • Place the pan over medium heat. Cook the burgers for 6-7 minutes on each side, or until the internal temp is 165. The cooking time will depend on how thick your burgers are. Thinner burgers may cook more quickly.
