Spicy Tuna Cakes with Lime Crema

Ingredients Needed for Spicy Tuna Cakes
Canned Tuna – You will need 9 ounces of drained canned tuna for this recipe.
Vegetables – You will need to finely dice the shallots, jalapeno and red bell peppers. This will help ensure the vegetables soften during cooking. Also, smaller vegetables help hold the burgers together better.
Egg – You will need one egg as a binder in this recipe.
Spices – Combine dried parsley, paprika, garlic powder, salt and black pepper for these burgers. This spice blend adds an extra punch of flavor that’s hard to resist.
Dijon / Mayonnaise – The Dijon mustard and mayonnaise add texture and flavor to this recipe.
Panko Breadcrumbs – The panko breadcrumbs are perfect in this dish. They add just the right amount of texture to this dish.
Lime Crema – Combine light sour cream, minced garlic, lime juice, lime zest and salt in a small mixing bowl. Mix until well combined.
How to Make Spicy Tuna Cakes with Lime Crema
Preheat the oven to 375 degrees.
In a large mixing bowl, combine drained canned tuna, finely diced jalapeno, finely diced shallots, finely diced red bell peppers, egg, dried parsley, paprika, garlic powder, salt, black pepper, Dijon mustard, mayonnaise, and panko breadcrumbs.
Mix until well combined.
Form the tuna mixture into 4 even-sized burger patties.
Heat 1 tablespoon avocado oil or olive oil in a skillet.
Once hot, add the tuna patties and sear for 1-2 minutes per side.
Place the tuna burgers in an oven safe dish and finish cooking them in the oven for 18-20 minutes.
While the burgers are baking, make the lime crema.
Combine light sour cream, lime juice, lime zest, minced garlic and salt in a small mixing bowl. Stir until well combined.
Once the burgers are cooked through, top them with the lime crema, avocado slices and fresh cilantro.
Storage

I picked up multiple cans of tuna in a recent Costco run and this was the perfect way to start using them. I will double the recipe next time because they made great lunches for work.
These were awesome. First of all, easy to make. Secondly, so tasty. My husband who doesn’t even like tuna loved these. I’ll definitely be making these again. Highly recommend.
