What is Giardiniera?

Giardiniera is a mix of crisp and colorful pickled vegetables. While there are many types of Giardiniera in store, they will typically include cauliflower, celery, carrots, peppers, onion and garlic. However, the versions can vary based on what brand you use. It can range from mild flavor to hot! I like using the Delallo Food’s hot giardiniera in my recipe. However, you can use mild if you prefer.

This spicy giardiniera egg salad is perfect for meal prep throughout the week. Loaded with protein and flavor, you’re going to love this recipe. Serve it with crackers, tuck it inside of a wrap of enjoy it on a sandwich.

Ingredients Needed for Giardiniera Egg Salad

Hard Boiled-Eggs – You’ll need 6 hard boiled eggs for this recipe. Add the eggs to a pot and cover them with cold water by 1-inch. Bring the water to a boil and once it begins to boil set the timer for 10-12 minutes depending on size. Once cooked through, place the eggs in an ice bath and allow them to cool before peeling. Carefully peel the eggs separating the yolks from the whites.

Dressing – Combine mayonnaise, whipped cream cheese, white wine vinegar, hot giardiniera oil, the six egg yolks, salt and black pepper. Mix until smooth and creamy.

Vegetables – Thinly slice the celery and chop the drained giardiniera mix into small pieces.

Herbs – You’ll need chopped chives and Italian parsley for this recipe. Make such they are both chopped small.

Cheese- You’ll need ¼ shredded mozzarella for this recipe.

How to Make Spicy Giardiniera Egg Salad

Hard Boil the Eggs

Hard boil your eggs according to the steps listed above. Peel the eggs and separate the whites from the yolks. Roughly chop the whites and set them aside.

Make the Dressing

Combine mayonnaise, whipped cream cheese, white wine vinegar, hot giardiniera oil, the six egg yolks, salt and black pepper. Mix until smooth and creamy.

Assemble the Salad

Add the chopped egg whites into the bowl with the dressing. Add the thinly sliced celery, chopped giardiniera, chopped chives, Italian parsley, and shredded mozzarella cheese. Mix until well combined. Serve chilled and enjoy.

Storage

Store leftover egg salad in an airtight container in the refrigerator for three to four days. Serve this egg salad with crackers, tucked in a wrap or as a sandwich.

  • 6 hard-boiled eggs , separate the yolks from the whites
  • 2 tablespoons mayonnaise
  • 2 tablespoons whipped cream cheese
  • 1 tablespoon white wine vinegar
  • 1 tablespoon hot oil, from the giardiniera jar
  • ¼-½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup celery, thinly sliced
  • cup giardiniera, drained and chopped
  • 1-2 tablespoons chives, chopped small
  • 1-2 tablespoons parsley, chopped small
  • ¼ cup shredded mozzarella cheese
