- Avocado Oil – You’ll need 1-2 tablespoons of avocado oil to sear the chicken.
Mushroom Gravy Ingredients
- Butter – This recipe calls for butter to sauté the mushrooms.
- Mushrooms – You’ll need 16 ounces of mushrooms for this recipe. You can use whatever variety you enjoy most. I used sliced baby bella. Rinse the mushrooms under cold water to remove any excess dirt. Use paper towel to dry the mushrooms well. Remove as much moisture as possible. Otherwise, the mushrooms will not get a nice sear in the pan.
- Herbs – Add 2 springs of fresh thyme to the gravy to help enhance the flavors.
- Chicken Broth – This recipe calls for chicken broth. You can use whatever brand you enjoy most.
- Worcestershire Sauce – This recipe calls for Worcestershire sauce to help deepen the flavor.
- Seasoning – Season the gravy with kosher salt and cracked black pepper to taste.
- Cornstarch – This recipe calls for cornstarch slurry to help thicken the gravy. Simply combine the cornstarch with 1-2 tablespoons of water to form a slurry before adding it to the gravy. This will prevent any lumps from forming in your gravy.
How to Make Skillet Chicken with Mushroom Gravy
Step 1: Butterfly the chicken breasts into four thin cutlets.
Step 2: Season the cutlets with kosher salt and black pepper.
Step 3: Sear chicken cutlets for 4-6 minutes per side.
Step 4: Remove the chicken and add butter tot he same pan.
Step 5: Add the mushrooms and thyme to the pan with butter.
Step 6: Saute mushrooms until golden brown with a nice sear.
Step 7: Deglaze the pan with chicken broth and Worcestershire sauce. Add cornstarch slurry. Taste and season accordingly.
Step 8: Simmer gravy over low heat. Then, nestle the chicken and juices back into the pan with mushroom gravy. Enjoy.

- The longer your gravy simmers the thicker it will get. This is commonly referred to as “reducing” the sauce or gravy. If it gets too thick, add more broth.

- 1-2 tablespoons avocado oil, to sear chicken
Mushroom Gravy
- 2 tablespoons butter
- 16 ounces mushrooms, rinsed, well dried and sliced
- 2 sprigs thyme, fresh
- 2.5 tablespoons cornstarch, + 1 tablespoon water to form slurry
- 3 cups chicken broth, low sodium optional
- 2 teaspoons Worcestershire sauce
- kosher salt, to taste
- few turns cracked black pepper, to taste

How to Make Skillet Chicken with Mushroom Gravy
Prep the Chicken
- Butterfly the chicken breasts and season both sides with a pinch of kosher salt and black pepper.
Pan Sear the Chicken
- Heat a nonstick skillet over medium high heat. Add the avocado oil. Once the oil is hot, add the seasoned chicken cutlets. Sear for 4-6 minutes per side. Cooking time will vary based on the thickness of the chicken. Use a thermometer to ensure the internal temp reaches 165 degrees Fahrenheit to ensure doneness. Once the chicken cooked through, remove it from the pan.
Make the Mushroom Gravy
- Using the same pan, make the gravy. Start by adding butter, mushrooms and thyme to the pan. Sauté the mushrooms until they are lightly browned.
- Next, deglaze the pan with chicken broth and Worcestershire sauce. Bring the broth to a light boil and slowly add the cornstarch slurry. Season with kosher salt and black pepper. Gently stir until the gravy begins to thicken. Reduce the heat to medium/low and let the gravy simmer.
Assemble
- Once the gravy reduces to your preferred thickness, nestle the chicken back in and serve hot.
Notes
Store any leftovers in an airtight container in the refrigerator for three to four days. Reheat in the microwave until warmed through.
