For this pretzel crusted tofu with spicy mustard sauce recipe, I used super firm tofu. Super firm tofu is great because it’s firm texture makes it very easy to work with. It also holds up well when baking or frying. The center is slightly tender while the pretzel crust offers a perfectly crispy outside. Paired with the spicy mustard sauce for dipping and this recipe is a total winner. Enjoy with a side of thick cut fries, or my simple salad recipe to keep things light. No matter what, this tofu recipe is one tasty vegan meal.

Storage

Store any leftover tofu in a sealed container in the refrigerator up to 3-4 days. However, the crust may begin to soften in the refrigerator. To reheat, you can add the tofu to the microwave or you can heat it in a skillet. ANy leftovers can be enjoyed on top of a salad or as is.

Ingredients

  • 1 cup crushed salted pretzel sticks
  • 1/4 cup mayonnaise , Vegenaise
  • 1/4 cup Dijon mustard
  • 2 tablespoons maple syrup
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 package super firm tofu

Vegan Spicy Mustard Sauce

  • 1/4 cup mayo , Vegenaise
  • 1/4 cup Dijon mustard
  • 2 tablespoons maple syrup
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • Cracked black pepper

Equipment

  • baking tray
  • 2 mixing bowls
  • 1 plate

Instructions 

  • Preheat the oven to 425 degrees.
  • Line a baking tray with parchment paper. Set aside.

Prepare the tofu:

  • Drain liquid from the tofu. Make sure to press out any excess moisture using paper towels or a clean kitchen towel. You can also use a tofu press if you have one handy. Removing the moisture allows the tofu to get crispy when cooking.
  • In a small mixing bowl, combine the mayo, Dijon, maple syrup, paprika, garlic powder, salt and pepper. Stir until well combined.
  • Crush the pretzels and add them to a plate.
  • Cut the tofu into 6 even sized slices.
  • Dredge each piece of tofu through the mayo / dijon mixture. Make sure it's well coated.
    Next, you'll add it to the plate with the crushed pretzels. Firmly press the pretzel pieces into the tofu to ensure they stick and that each piece is well coated. Repeat for all pieces.
  • Then, you’ll place the encrusted tofu on the prepared baking tray. Cook for a total of 20 minutes flipping halfway through.

Prepare the spicy mustard sauce:

  • In a small bowl, combine mayo, mustard, maple syrup, pepper, paprika and salt. Stir until well combined. Set aside.
  • Remove the tofu from the oven, let it cool for a few minutes and serve warm with a side of the spicy mustard sauce.
