Pan Roasted Honey Lime Chicken Thighs
Simple, easy and delicious, these pan roasted honey lime chicken thighs are the perfect weeknight meal. This entire recipe comes together very quickly and tastes incredible. Serve it alongside steamed bok choy, roasted broccoli or any vegetable you enjoy most. For a heartier meal, add cooked rice or a side of rice noodles. No matter what, you’re going to love this recipe.
The marinade is made from four ingredients that you most likely have on hand. Low sodium soy sauce, minced garlic, honey and lime juice, that’s it! Be sure to reserve the extra marinade as you will add it to the pan to make the most delicious sauce.

Ingredients Needed for Pan Roasted Honey Lime Chicken Thighs
Chicken – For this recipe, you’ll need about one pound of Smart Chicken’s boneless skinless chicken thighs. The thighs are juicy, tender and loaded with flavor. If your thighs are bone-in or have skin the cooking time will vary.
Avocado Oil – For this recipe, you’ll need one tablespoon of avocado oil to sear the chicken. I like using avocado oil because it is a neutral oil and doesn’t impart any flavor on the chicken. However, if you only have olive oil, that will work too.
Marinade – Combine honey, fresh squeezed lime juice, low sodium soy sauce, and minced garlic in a small mixing bowl. Add the chicken thighs and toss it in the marinade until it is well coated. Cover and refrigerate for 15-20 minutes. This allows the chicken or absorb the marinade. Let the chicken rest at room temperature for 5-10 minutes before adding it to the pan.
Garnish – Add the chicken thighs and sauce to a serving platter. Top it with freshly chopped green onion, and cilantro. Serve hot. Option to season with cracked black pepper and chili flakes for some spice.
How to Make Pan Roasted Honey Lime Chicken Thighs
Preheat the oven to 400 degrees.
Combine fresh squeezed lime juice, low sodium soy sauce, minced garlic and honey in a small mixing bowl. Add the boneless, skinless chicken thighs to a sealable bag or to a bowl that can be covered with a lid.
Pour the marinade over the thighs and toss the chicken until its well coated. Cover and refrigerate for 15-20 minutes.
Remove the chicken from the refrigerator and allow it to rest for 5-10 minutes.
Heat an oven safe pan over medium high heat and add the avocado oil.
Add the marinated, boneless skinless thighs to the pan and allow them to get a nice brown sear on each side. About 3-4 minutes per side.
Reduce the heat and add the remaining marinade to the pan. Bring to a simmer for 1-2 minutes.
Place the pan in the oven for 12-15 minutes or until the chicken reaches an internal temperature of 165 degrees (180 degrees for bone-in, skin-on thighs). Cooking time will vary based on the thickness of the chicken thighs. Thicker thighs will need more time, while smaller thighs will require less cooking time.
Add the cooked chicken thighs and sauce to a serving platter. Top it with freshly chopped green onion, and cilantro. Serve hot.
Storage
Store any leftovers in an airtight container in the refrigerator for three to four days. Reheat in the microwave until heated through.
