Mini Bunny Cake Recipe for a Hoppy Easter Holiday

Easter is one of the largest baking holidays of the year and this mini bunny cake recipe will not disappoint. It’s colorful, cute and super easy!

And as an added bonus, we have included some fun pictures depicting a variety of ways that you can use all-natural food dye to decorate your mini cakes. So, let’s get started! 

Mini Bunny Cake - Healthyish Brand Recipe

What you’ll need: Makes 1 Mini Bunny Cake (2 to a box)

1 Healthyish vanilla bean baking kit 

2 Tablespoons of unsalted, room temperature butter

4 Tablespoons of 2% milk 

4 biodegradable baking cups (come with the kit) 

One box of Color Kitchens natural food dyes

Handful of coconut 

Pinch of sprinkles 


Preheat your oven to 350 degrees 

Grab a small mixing bowl, whisk, and spatula

Pour two pouches of the organic vanilla bean cake mix into the small mixing bowl

Add in 2 tablespoon of butter a 4 tablespoons of 2% milk 

Whisk ingredients together

Once blended, you will bake the mini cakes for 11- 12 minutes

While the mini cakes are baking you will take 1 pouch of the organic vanilla bean frosting and squeeze it into a  small bowl

Add in some of the pink natural food dye from color kitchen – blend well 

Once the cakes are fully cooked, remove them from the oven and allow them to cool 

Flip the mini cakes over so the bottom of each mini cake is now facing up

You will arrange one of the mini cakes on a small, decorative plate

Take a small circular cookie cutter and gently press the sides of the second mini cake to form two ears and a small bow tie (image below)

You will then gently place the two small pieces on the sides of the untouched mini cake to form bunny ears

The remaining center piece will then serve as a cute bow tie

Take the white vanilla bean frosting and evenly spread it over the bunny’s face and ears – leaving the bow tie untouched

Use the pink colored frosting to complete the bow tie and to make a small dot as a bunny nose

From there you can sprinkle on shredded coconut to give the effect of fur

You can also use fresh fruit or chocolate chips for the eyes

Finally, you will sprinkle the tie with some rainbow sprinkles and viola! You’ve made a cute mini bunny cake that no one will be able to resist!
