Loaded Taco Fries
These loaded taco fries are a fun twist on taco night. Loaded with flavor your entire family will love this easy to make recipe. What’s great is that you can add whatever toppings you love most. Perfect as a fun weeknight meal or as an appetizer at your next get together. No matter what, this loaded taco recipe is a winner.
Ingredients Needed for Loaded Taco Fries
Russet Potatoes – You will need 3-4 large russet potatoes for this recipe. Be sure to wash the potatoes and cut them into evenly sized fries. Rinse them with cold water and pat them dry. Option to leave the skin on. Add them to a large mixing bowl.
Taco Seasoning – You will need one pouch of taco seasoning for this recipe. Add it to the fries, making sure they are all well coated.
Olive Oil – Add the fries to a baking tray and toss them with olive oil before baking.
Chicken – Boil either chicken breasts or tenderloins in hot water. Once they reach 165 degrees remove them from the water. Using two forks shred the meat and set it aside.
Cheese – I used shredded cheddar cheese for this recipe, but you can use any cheese you enjoy most.
Lime Crema – Be sure to make a simple lime crema to drizzle over the loaded fries. It’s sour cream, lime zest, lime juice, garlic and salt. Mix until well combined.
Toppings – You can use any toppings you desire, but I used shredded lettuce, diced tomatoes, diced jalapeno, diced black olives, avocado, and cilantro.
How to Make Loaded Taco Fries
Preheat the oven to 425 degrees.
Combine light sour cream, lime juice, lime zest, minced garlic and salt in a small mixing bowl. Cover and refrigerate.
Wash and dry your potatoes.
Cut them into evenly sized fries and rinse them under cold water.
Pat them dry with a paper towel.
Toss them with taco seasoning and add them to a baking tray.
Drizzle with olive oil making sure all sides are well coated.
Bake for 25 minutes at 425, toss the fries, reduce the heat to 375 and let them finish baking for 20-25.
Boil a pot of water and cook your chicken in the water for 15-20 minutes or until the chicken reaches 165 internally.
Drain the water. Using two forks shred the chicken and set it aside.
Once the fries are cooked, you can add the shredded chicken and shredded cheese.
Place back in the oven for 2-3 minutes or until the cheese is melted.
Next, add the shredded lettuce, diced tomatoes, diced jalapeno, diced black olives, avocado slices, and cilantro. Top everything with the lime crema and enjoy!
Storage
Best enjoyed immediately! Leftovers can be stored in an airtight container in the refrigerator. However, the lettuce might get soggy. Looking for more recipes?

I am making this for some friends coming over tomorrow and I made a small batch as a test run for my husband. He didn’t even let me put them on a plate. The man ate nearly every fry from the tray. I think it’s safe to say these are good!
