Hate wasting food? Reuse grilled fruit in your Healthyish mini cakes. It’s a great way to reduce waste and naturally sweeten your mini cakes at the same time.
So, let’s get started,
What You’ll Need:
1 Organic Lemon Baking Kit
1.5 Tablespoons unsalted, room temperature butter
2 Tablespoons 2% Milk
2 Teaspoons brown sugar
Leftover grilled pineapple
Preheat your oven 350 degrees
Grab two small mixing bowls, a whisk, and spatula
Pour 2 tablespoons milk and 1 tablespoon of butter into one of the bowls.
Add in 1 pouch of organic Healthyish lemon cake mix, and whisk ingredients together. Set aside.
In the second mixing bowl, add .5 tablespoons of butter and 2 teaspoons of brown sugar and combine together until the sugar forms small balls.
Add the sugar and butter combination to the bottom of a lightly sprayed biodegradable baking cup. (baking cups come with the kits)
Add one piece of (1/2 thick) grilled pineapple on top of the butter and sugar mixture
Pour the lemon cake mix batter on top of the pineapple and tap it on the counter so everything settles to the bottom of the cup.
Bake for 14 – 15 minutes at 350
Remove from the oven, turn over and enjoy!
