Every year my sister Becky makes loads of the holiday cookies for our family get together. Everything from buckeyes to biscotti and even those cute melted snowmen cookies. However, my all-time favorite are her peanut butter blossoms. (insert drool face) And seeing how I live in Colorado, she was willing to give me the recipe this year. So, if you’re looking for a tasty cookie recipe to add to your holiday dessert table try baking up these Healthyish Holiday Peanut Butter Blossoms by Becky! They really are the best!
½ cup shortening
¾ cup of peanut butter
1/3 cup granulated sugar
1/3 cup light brown sugar
2 tablespoons milk
1 teaspoon vanilla extract
½ teaspoon salt
1.5 cups AP flour
1 teaspoon baking soda
48 Hershey kisses – unwrapped
Baking Instructions – 4 dozen cookies
Heat oven to 375 degrees
Mix shortening and peanut butter in a large bowl
Add 1/3 cup granulated sugar and 1/3 cup light brown sugar: beat until fluffy
Add 1 egg, milk and vanilla extract – mix well
In a separate bowl mix together the flour, baking soda, and salt – slowly mix this into your peanut butter mixture until everything is well blended.
Shape the dough into 1 inch balls then roll them in granulated sugar. Place on an ungreased cookie sheet and bake for 8-10 minutes or until they are lightly browned. Once the cookies are fully baked, immediately press one chocolate kiss into the center of the cookie. They will slightly melt and adhere to the cookie as they cool.
