The Thanksgiving feasting has come to a close, but the leftovers still abound. If you still have cranberry sauce kicking around, we have the cranberry cocktails and Healthyish cakes for you!
We set our tables with our individually portioned, organic cakes. We toasted our family and friends. We ate. We ate more. (We maybe regretted eating more.) We curled up in front of the parades, the games, the holiday specials, and we lounged until dessert. And now? Now is the time to get creative with the leftovers!
Chances are, even after all the feasting, you still have some leftovers kicking around. To keep the festive spirit going, we scrounged up all the leftover cranberry sauce and the fresh, tart berries to create cranberry cocktails and cranberry Healthyish cakes. These are sweet treats and sips in the name of wasting less.
Whiskey drinkers, these cranberry cocktails are for you. A tart take on berry smash cocktails or a berry take on an old fashioned, this is your post Thanksgiving sipper. But the scents of fresh citrus and rosemary will keep these cranberry cocktails in your rotation all winter long.
Cranberry Old Fashioned
4 dashes Angostura bitters
2 oz bourbon (such as Blanton’s)
1-2 Tablespoons organic cranberry sauce
Combine the bitters, bourbon and cranberry sauce in a cocktail shaker with ice. Shake until blended. Strain over ice or a whiskey stone. Serve with an orange slice and fresh rosemary.
Healthyish Cranberry Sauce Cakes
If you have leftover whole cranberries, add a few to our organic Tangy Lemon cake mix for a perfect sweet and tart dessert combination. Top with our organic vanilla bean frosting, then create a real stunner with leftover cranberry sauce. To pair these cakes with the whiskey cranberry cocktails, add a little fresh orange zest and a rosemary sprig.
For brunch sipping or just to treat yourself to something special, go the bubbly route for your post-Thanksgiving cranberry cocktails.
Cranberry Mimosa
Simply add 1-2 Tablespoons of leftover cranberry sauce to your favorite rosé bubbly.
If you’re drinking mimosas in the morning, you might as well indulge in a cranberry cake for breakfast too. Try the garnished Tangy Lemon Cake or add tart cranberries and white chocolate to our organic Very Vanilla Bean cake mix.
