Perfect for nights when you want something easy and healthy but don’t have a ton of time. The fresh and light greens will fill you up without weighing you down. This really is the best butter lettuce salad recipe of all time.

It’s perfect with a side of pasta or try adding your favorite protein for a heartier meal. Personally, I like to add grilled salmon or chicken to mine. However, crispy tofu or tempeh would taste amazing as well. To make this recipe vegan, simply use a vegan grated parmesan and your preferred vegan protein and you are all set. This versatile and delicious butter lettuce salad recipe is guaranteed to be a hit.

Storage

Store any leftover salad in an airtight container in the refrigerator for 3-4 days. Store the dressing separately to prevent the lettuce and fresh herbs from wilting.

Ingredients

Salad:

  • 1 head butter lettuce, wash and chop into medium sized pieces
  • 1 head romaine lettuce, wash and chop into bite-sized pieces
  • ¼ cup dill, fresh, chopped small
  • ¼ cup Italian parsley, fresh, chopped small
  • 2 tablespoons chives, fresh, chopped small
  • 1 handful pea shoots
  • ¼ cup parmesan cheese, freshly shaved
  • salt, to taste
  • p black pepper, to taste

Dressing:

  • ¼ cup olive oil
  • 2 tablespoons lemon juice, fresh squeezed, about 1 lemon
  • 1 tablespoon honey
  • salt and pepper, to taste

Equipment

  • 2 mixing bowls

Instructions 

Prepare the Dressing

  • In a small bowl, combine the olive oil, lemon juice, honey and salt and pepper. Whisk until well combined.

Prepare the Salad

  • Add the washed, dried, and chopped butter lettuce and romaine lettuce into a large mixing bowl.
  • Next, add the chopped parsley, dill and chives and gently toss. Option to sprinkle a handful of pea shoots over the top of the salad.
    Finish with freshly shaved parmesan and a light drizzle of homemade lemon dressing. Add as much or as little dressing as you desire.
  • Serve immediately after adding the dressing.
