Whip up a quick and delicious batch of these gluten free banana chocolate chip morning muffins. They are easy to make and much better than anything you can grab at the corner store. So, brew some coffee and let’s get this tasty recipe started. 

What You’ll Need: 

  • 2 cups gluten free flour (Outrageous brand) 
  • ¾ cup cane sugar 
  • Pinch of salt 
  • teaspoon baking powder 
  • ½ teaspoon vanilla bean specs 
  • cup milk 
  • medium banana or 2 small ripe bananas 
  • 1 teaspoon vanilla flavor 
  • 2 eggs 
  • 1/3 cup vegetable oil 


  • Preheat oven to 350 degrees 
  • Lightly grease a cupcake pan or line it with cupcake liners
  • Grab 2 medium sized mixing bowls
  • In one mixing bowl, combine your dry ingredients
  • This includes, gf flour, salt, cane sugar, baking powder, and vanilla bean specs. Whisk together 
  • In the second mixing bowl combine your wet ingredients
  • This includes, eggs, milk, vegetable oil, vanilla flavor, and smashed banana. Gently whisk together
  • Next, you will combine your wet and dry ingredients in to one bowl and whisk together. I like to use a hand mixer during this part to make sure everything is really well blended
  • Finally, you can fold in some chocolate chips or nuts or anything that you really enjoy
  • Portion the batter into the baking pan and bake for 20 minutes at 350 degrees
