Going meat-free is no easy task, take it from me I’ve been a vegetarian for 3.5 years. But if you’re trying to cut back on your meat intake, then this recipe is for you! These Healthyish BBQ Tofu Lettuce Cups are completely vegetarian but taste like they came from your favorite BBQ joint down south. (For Reals Y’all) They are super easy to make and pack a ton of flavor. Personally, I love spicy food so this recipe does pack some heat, but you can tone down the spice, so don’t worry. Typically, all of our Healthyish recipes can be tweaked, which is what makes them so great for people on the go. Or people who might not have all of these ingredients at home.
YOU WILL NEED:
1 Pack Super Firm Organic Tofu
1 Medium-Sized Lime
2-3 Tablespoons of BBQ Sauce
First, you are going to open up your pack of super firm organic tofu and drain off all the liquid. Next, you will wrap the tofu in some paper towel and lightly press the tofu to drain off any additional liquid that might be inside of the tofu. You want to remove as much liquid as possible, this will decrease your frying time.
Next, you will cut your tofu into bite size cubes. From there, lightly oil your frying pan and add the tofu. Fry on a medium heat until all sides of the tofu have a light crisp to them. Add salt and pepper to taste.
While the tofu is frying in the pan, you will begin chopping up your veggies. I use about a handful of carrot chips. You know, the ones that look like potatoes chips and have the wavy lines. Next, you will chop up ½ of a white onion and set it aside. Finally, you will chop up your jalapeno. I used two large slices for my recipe but you can use as much or as little as you like. Set all of your veggies aside.
Once the tofu is crispy you will add about 2 – 3 tablespoons of BBQ sauce to the frying pan. I use Sweet Baby Rays (original) but you can use any BBQ sauce that you like. You just want to lightly coat the tofu in the sauce. Do not dump on too much sauce, this will make your tofu too sweet and kind of soggy.
Once the BBQ sauce starts to caramelize a bit add in the chopped jalapeno, onion and carrots. You want the veggies to soften up a bit but not too much. Having a little crunch from the veggies is a great way to balance out the soft centers of the Tofu. Finally, you will take half of your lime and squeeze it over everything in the pan. Mix well and remove the pan from the heat.
As a final step, you will spoon your BBQ Tofu mixture into your lettuce cups. From there, you can garnish with the BBQ Tofu Lettuce Cups with cilantro and crushed peanuts for some extra flavor. Trust me, this recipe is sure to be a crowd pleaser!
