These grated halloumi breakfast tacos are dangerously addicting. Once grated, the halloumi fries in the pan forming a perfectly crispy layer of cheese. Top it with an egg and cook the egg to your liking. Place the fried halloumi and egg on a heated tortilla and top it with creamy avocado, pea shoots and hot sauce for the ultimate breakfast taco.

Grated Halloumi Breakfast Tacos – Healthyish Foods

What’s great, is that you can add any toppings you enjoy most. Halloumi is salty in flavor, so it tastes great with the creamy egg yolk and spicy hot sauce. However, you can dress it up any way you like. I’m a huge fan of adding freshness. So, if you don’t have pea shoots handy, cilantro or microgreens would work well too.

Ingredients Needed for Grated Halloumi Breakfast Tacos

Halloumi – you will need to grate some halloumi for this recipe. I used about ½ – 1 ounce per breakfast taco. Make sure you are using a sharp microplane grater to ensure the cheese is grated very finely.

Tortillas – You can use whatever tortilla you enjoy most. I like La Tortilla Factory’s flour and corn blend. Be sure to heat the tortillas.

Eggs – You will need two eggs for this recipe.

Avocado – You will need ½ of an avocado for this recipe. Cover and store the remaining half.

Hot Sauce – I used Frank’s hot sauce for this recipe, but you can use any hot sauce you enjoy most.

Pea Shoots – I added some fresh pea shoots to my tacos, but cilantro or microgreens would also work well.

Black Pepper – Add a few turns of fresh cracked black pepper over everything.

How to Make Grated Halloumi Breakfast Tacos

Grab a 9-inch non-stick skillet and place it over medium heat.

Use a microplane grater and grate a thin layer of halloumi on the bottom of the pan.

Once it begins to lightly brown, crack one egg over the halloumi.

Option to cover the pan with a lid to cook the egg.

Or, once the egg sets and the halloumi is crispy, carefully flip it with a spatula to cook the other side.

Place the crispy fried halloumi and egg on a heated tortilla.

Top it with avocado, pea shoots, hot sauce and black pepper. Repeat for the second taco. Enjoy.

Storage

Store any leftover halloumi in a small, sealed bag in the refrigerator. Best enjoyed immediately. Looking for more recipes?
