After coming home from Mexico, I was feeling inspired to make a simple recipe that checks all the boxes. And this grated egg stuffed avocado is it. What’s great, is that you can customize this recipe to your liking. Switch up the cheese, add some hot sauce, cilantro, jalapeno or anything you enjoy most. Trust me, you’re going to love this delicious breakfast recipe.
Ingredients Needed for Grated Egg Stuffed Avocados
Avocado – You’ll need one avocado for this recipe. If it’s large you can use a half. Be sure to peel it and remove the pit. Also, shave off a small sliver from the bottom so it lays flat on the plate.
Salsa – You will need your favorite salsa for this recipe. I used a simple mild salsa, but you can use whatever you like.
Hard-Boiled Egg – You will need one hard-boiled egg for this recipe. The egg will grate better if it is chilled. Be sure to use a microplane paddle grater for the best outcome.
Cheddar Cheese – You will need one tablespoon of grated cheddar cheese. You can use shredded cheese if that’s easier.
Salt / Pepper – season everything with a pinch of salt and pepper.
How to Make Grated Egg Stuffed Avocados
Grab one avocado, peel and pit it. Slice a thin layer from the bottom so it lays flat on the plate.
Fill it with salsa.
Grate one hard-boiled egg over the top of the salsa.
Grate the cheddar cheese over the egg.
Season with salt and pepper. Enjoy!
Storage

I actually made this for a gluten-free lunch today and I’m sad I never thought of it before. I think the next time, I will try some shredded pepper jack for a little more heat!
