Firecracker Chicken Bites
These firecracker chicken bites are crispy on the outside and juicy in the center. Smothered in the most delicious sauce, you’re going to love this recipe. Enjoy these bites as an appetizer or over a salad. You can tuck them inside of a wrap too! No matter what, they’re delicious.

Ingredients Needed for Firecracker Chicken Bites
Chicken – You’ll need 1 lb. Smart Chicken’s chicken breasts. Cube the breasts into bite-sized pieces.
Breading Station – You’ll need cornstarch, salt, pepper, eggs, and panko breadcrumbs for the breading.
Sauce – You’ll combine butter, buffalo sauce, light brown sugar and rice vinegar in a small sauce pot.
Green Onions – Garnish the dish with green onions.
Red Pepper Flakes – optional
How to Make Firecracker Chicken Bites
Preheat the oven to 375 degrees.
Line a baking tray with parchment paper.
Cube your chicken breasts into bite sized pieces.
Setup three plates, one with cornstarch, salt and pepper. The second, with two whisked eggs. The third, with panko breadcrumbs.
Dredge the chicken through the cornstarch mixture, then the eggs, then the panko.
Place the breaded pieces on the prepared baking tray.
Spray the chicken with olive oil cooking spray and bake for 25-30 minutes or until the center reaches 165 degrees Fahrenheit. Flip halfway through.
While the chicken bakes, make the sauce.
Combine buffalo sauce, light brown sugar, rice vinegar, and butter over low heat. Whisk until well combined.
Grab a large mixing bowl.
Add the baked chicken to the bowl and toss it with the sauce until well coated.
Serve hot with freshly chopped green onions. Option to add red pepper flakes.
Storage

- 1/2 cup brown sugar
- 2 tablespoons butter
- 1 tablespoon rice vinegar

Instructions

Awesome recipe. I did find that they didn’t get as brown as I would have like so I did spray them with Pam and turned up the oven to 400 for 10 mins at the end (cooked 35 mins in total using chicken thigh pieces and I flipped them over once) . Using Pam is Not as good of a choice as the olive oil spray (which I did use at first) but I wanted the browner toaster look. The sauce is amazing.
