Recipe Ingredients
- Watermelon: This recipe calls for fresh ripe watermelon. Cube it into bite-sized pieces. You’ll need 5-6 cups or about 1/3rd of a large watermelon.
- Oil: This recipe calls for extra virgin olive oil.
- Lemon: You’ll need fresh squeezed lemon juice for this recipe.
- Salt: Season the dressing with kosher salt.
- Parsley: I like using flat leaf Italian parsley for this recipe. Chop it very small.

How to Tell if a Watermelon is Ripe (expert tips)
- Look for a field spot. Or a pale-yellow spot on the watermelon. This means the watermelon rested in the field while growing and ripening. If this spot is green it is not ready.
- Feel the weight. I ripe melon will feel heavier as it is filled with juices.
- Give it a knock! Knock on the watermelon like you would a door. If it sounds hollow it is ready!
How to Make
Make the Dressing
Combine extra virgin olive oil, fresh squeezed lemon juice, and kosher salt in a mixing bowl. Whisk well. Add the chopped small parsley and gently stir it in.
Cube the Watermelon and Assemble
Remove the rind form the watermelon and cube into bite sized pieces. Place the cubed watermelon in a serving dish and top with the dressing. Gently toss and enjoy.
The watermelon will release juices over time so best enjoyed immediately.
