About this recipe

For this recipe, I used Delallo Foods’ Pizza Kit. It comes with premeasured type 00 flour and yeast. Simply add water and knead to achieve perfect pizza dough. Once you knead the dough, you will want to let it rest covered at room temperature for at least 45 minutes. However, I suggest letting it rest for about 2 hours before using. I’ve tried a variety of dough recipes and this pizza dough kit is by far the best I’ve ever come across. It gives you a slightly crispy crust with a perfectly chewy center. It also holds up incredibly well on the grill!

Also, it is very important to have your Delallo Pizza Sauce, sliced Mozzarella Cheese,  Marinated Artichoke Hearts, Medium Pitted Black Olives, Roasted Red Pepper Strips , grated Parmesan Cheese and Sliced Pepperoni ready to go. I like to place all of my ingredients into small bowls so I can easily access them when making my pizza. You will not have a ton of time once the dough is on the grill, so being prepared with these items is essential.

Grilling tips

Once the dough has rested, preheat your gas grill to 550-600 degrees. While the grill is heating, divide the dough in two evenly sized portions. Add a small amount of flour to your work surface and roll the dough into 10-inch rounds. You’ll want the dough to be medium thickness so that it is easy to handle on the grill. If you roll it too thin, it will cook too quickly, and the cheese will not have sufficient time to melt. If it is too thick, you’ll run the risk of the crust getting burnt / too dark before it can fully cook through. So, medium thickness is best.

Next, dust your pizza peel or baking tray with a light dusting of flour. Brush both sides of the dough with Delallo Garlic Parmesan Dipping Oil and add it to the prepared pizza peel or baking tray. Only grill one pizza at a time. Dusting the baking tray or pizza peel with flour helps the dough to easily slide onto the hot grill. You will want to move quickly during this step, so the oil doesn’t saturate the flour, otherwise it won’t slide.

Once the dough is on the grill, close the lid and let it cook for 2-3 minutes. Using a metal grill spatula, you will flip the dough and remove it from the grill. Place it back on your tray or pizza peeler. Begin quickly adding your sauce, cheese and toppings to the side of the crust with grill marks. Once it is loaded with toppings add the pizza back on the grill, uncooked side down. Close the lid and cook for another 2-3 minutes. Once the cheese is melted and the pizza is cooked through remove it from the grill. Slice and enjoy.

Storage

You can refrigerate the covered raw dough up to 48 hours. However, you’ll have to let it come back to room temperature before using. Make sure the saran wrap is airtight over the top to prevent the dough from drying out. Any unused dough can be frozen in an airtight Ziplock bag for up to 30 days in the freezer. You can refrigerate any leftover grilled pizza in a Ziplock bag for 3-4 days.
