This Cobb salad with cilantro lime dressing is so delicious. It’s packed with seasonal favorites like grilled corn, large ripe tomatoes, grilled meats and zippy dressing. As a finishing touch, I like to toss a few quick pickled onions on top of everything for that extra bite and beautiful color.

Cobb Salad with Cilantro Lime Dressing

  • 1 head romaine lettuce , washed and rough chopped
  • ½ large avocado , sliced
  • 2 ears of corn , grilled and cut from cob
  • 1 large ripe tomato , sliced
  • ½ cup cherry tomatoes , sliced in halves
  • 2 eggs , hard-boiled and sliced in halves
  • 1 large chicken breast , grilled and cut into slices
  • 2 chicken sausages, butterflied and grilled
  • cheddar cheese , sliced into wedges
  • pickled onions
  • scallions , sliced
  • salt and pepper, to taste

Cilantro Lime Dressing

  • 3/4 cup olive oil
  • 4 cloves garlic
  • 2-3 medium jalapeños, cut your jalapeños length-wise and remove seeds for a less spicy dressing.
  • ¼ cup fresh squeezed lime juice, juice from about 4-5 limes
  • 2 cups chopped fresh cilantro , de-stemmed and packed in the measuring cup
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • ½ teaspoon salt
  • Combine the cilantro, garlic, honey, mustard, jalapeno, lime juice, and salt in a blender. Slowly pour in the olive oil until well combined.

Grill your meat and corn:

  • Place foil on your grill, and preheat your grill to 400 degrees.
  • Add the chicken breast, chicken sausages and two ears of corn to the grill.
    The chicken breast will need to cook for 5 minutes on each side, or until the meat is fully cooked through.
    The chicken sausage is already cooked, so it will just need to heat up and get a slight char.
    Finally, the corn will need to also cook for about 10 minutes, turning frequently.
    Remove all of these items from your grill, and turn off the grill.

Assemble the salad:

  • Add your roughly chopped romaine lettuce to the bottom of the platter.
  • We will start adding the ingredients in columns on top of the lettuce, starting from left to right.
  • First, you will cut an avocado in half and slice it. Add half of avocado to the salad. You can store and refrigerate the second half.
    Next, using a knife, carefully remove the grilled corn kernels from the cobb. Add the grilled corn kernels to the salad. Make sure they are cool so they do not wilt the lettuce.
  • Next, you’ll add a row of fresh sliced tomatoes. Both the large red tomatoes slices along with the cherry or grape tomatoes cut in halves. (you can even drizzle a touch of balsamic and a pinch of salt on the tomatoes for extra flavor.)
  • Them you will add some fresh sliced jalapeno along with your hard-boiled eggs cut in halves.
  • Next, you’ll cut your chicken breast into slices and add it to the salad. Make sure the chicken is not hot or it will wilt the lettuce.
    Then, you will add the butterflied and grilled chicken sauges to the salad. Drizzle the chicken breast slices and chicken sausage with the cilantro lime dressing. Reserve some of the dressing on the side for anyone who may want more.
  • The last row will be the sliced cheddar cheese wedges. You can also use blue cheese if you prefer.
  • Top everything with a touch of salt and pepper along with some quick pickled onions.
  • Serve and enjoy!
