This chicken broccoli stir fry recipe is easy to make and absolutely delicious. The chicken is crispy on the outside and tender in the center. Tips and Tricks for this Recipe

When prepping the rice noodles, be sure to soak them in hot water for 10-15 minutes until the soften. Also, I used raw broccoli for this recipe, but you can soften it in advance if you prefer. Personally, I like my vegetable to have a slight crunch when enjoying this dish.

Take the single serve chicken breast and carefully butterfly it in half. Butterfly is a technique where you slice a thick piece of meat in half. This allows it to cook more quickly and evenly. Next, using a sharp knife, cut the chicken into thin, even sized strips. Be sure to season the meat with salt and pepper.

How to Make Stir Fry

  • Grab a large skillet and add 1 tablespoon sesame oil.
  • Next, add the minced garlic, minced ginger, chicken slices, salt and pepper.
  • Once the chicken is slightly browned, add the raw broccoli florets. Stir well.
  • Next, add the soy sauce and brown sugar. Option to add red pepper flakes.
  • Let the sauce reduce by half, then remove everything from the pan. Set it aside.
  • In the same pan, add 1 tablespoon olive oil.
  • Once it’s hot, add the whisked eggs. Once the eggs begin to set and are firm, add the drained rice noodles.
  • Toss the noodles and egg together. Add the chicken broccoli and sauce back into the pan. Toss until everything is well coated in the sauce.
  • Top with lime wedges and mung bean sprouts.

Ingredients

  • 1 chicken breast, butterflied and sliced thin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 ounces rice noodles, soak in hot water until soft
