Cheesy Ranch Chicken Dip
Perfect as an after-school snack or as an appetizer at your next gathering, this cheesy ranch chicken dip with crumbled bacon and jalapeños is dangerously addicting. Serve it alongside some fresh celery and carrots or enjoy it with tortilla chips. Either, way, this dip is guaranteed to be a hit.
What’s great is that it’s made from simple ingredients that you most likely have on hand. This entire dip recipe comes together in under 45 minutes.
Ingredients Needed for Cheesy Ranch Chicken Dip
Chicken Breasts – Boil a pot of water and cook your Smart Chicken chicken breasts until the internal temperature reaches 165 degrees. Remove the chicken from the water and once it cools, shred it.
Cheese – For this recipe, you’ll need 1 (8-ounce) block of low-fat cream cheese, 1.5 cups shredded cheddar cheese with some extra for the top.
Sour Cream – For this recipe, you can use regular or light sour cream. I used light and it was delicious.
Ranch Seasoning – You’ll need 1 (1-ounce) package of ranch seasoning for this recipe.
Bacon – You’ll need about ½ – ¾ cup crumbled bacon.
Jalapeno – Option to add thinly sliced jalapeno on top of the dish.
How to Make Cheesy Ranch Chicken Dip
Preheat the oven 350 degrees.
Spray a cast iron pan with olive oil cooking spray. Set aside.
Boil a pot of water and cook the chicken.
Shred the chicken with two forks or a hand mixer. Set aside.
In a large mixing bowl, combine cream cheese, ranch seasoning, shredded cheddar cheese, light sour cream, and shredded chicken. Mix well.
Add the mixture to the prepared cast iron pan and spread it evenly.
Top with a touch of shredded cheddar and bake for 20-25 minutes.
While the dip is baking, fry off some bacon and chop it into crumbles.
Add the crumbles on top of the hot dip along with some thinly sliced jalapeno.
Serve hot.
Storage
