Ingredients Needed for Caramelized Onion and Goat Cheese Toast
Baguette – I used a 12-inch French baguette which is perfect for dinner recipes. I sliced it in half at the center, and then sliced the halves length wise to end up with four, 6-inch half loaves. You can also slice the bread into smaller ovals for an easy appetizer.
Olive Oil – You will need to dress the center of the baguette with olive oil and pan fry it on both sides. This allows the bread to get crispy on the outside and remain soft in the center. You will also need some olive oil for the caramelized onions.
Red Onion – For this recipe you, will need to peel and remove the roots from a large red onion. Slice the onion into ½-inch thick slices. I added a touch of salt and red wine to my onions to prevent them from drying out in the pan. You can also add a touch of butter. Details below.

Seasoning / Herbs – Be sure to finish this recipe with a touch of fresh thyme and cracked black pepper. You can even add a drizzle of honey for an extra punch of flavor.
How to Make Caramelized Onion and Goat Cheese Toast
Caramelize the Onion
Start by peeling and removing the root from your onion.
Slice into evenly sized pieces.
Heat a non-stick skillet over medium high heat.
Add one tablespoon olive oil.
Once the oil is hot, add the chopped onions and begin stirring them.
Reduce the heat to medium, and season with a small pinch of salt.
Add the butter.
Option to add 2 tablespoons of red wine to prevent the onions from drying out in the pan. Be sure to cook off the alcohol.
Stir frequently until the onions are soft and dark brown in color.
Prepare the Baguette
Slice the baguette in half at the center. Then, slice the two halves length wise so you end up with four, 6-inch halves.
Drizzle the inside of the baguette with olive oil and fry in a hot pan until golden brown on the inside.
Remove from the heat. Set aside.
Assemble the Toast
Smear roughly one tablespoon of sheep goat cheese over the inside of warmed golden toast.
Layer on some of the caramelized onion.
Sprinkle with fresh thyme and cracked black pepper.
Serve.
What Happens When You Heat Goat Cheese?
If you’re worried about the goat cheese melting on the warmed toasts, don’t be.
Goat cheese toasts are unique in that, when it is heated, it doesn’t melt into a puddle like other cheeses would. Instead, goat cheese softens into a delicious, gooey ball of cheese. This makes it the perfect spreadable cheese to go over toast, crackers, or other types of bread
Is Goat Cheese Better Warm or Cold?
It is always best to use goat cheese that is at room temperature, as it may not be spreadable when it is cold. Furthermore, cold goat cheese won’t impart such rich flavors as room temperature or warmed goat cheese would.
As the cheese softens, it tastes richer and adds so much creaminess to the dish. This type of cheese is truly a treat that goes with just about anything, especially the slightly sweet taste of caramelized onion and olive oil.
The warm toasted bread helps warm the cheese just enough so that it is soft without being gooey. There is no need to cook the cheese at all when making this goat cheese toast.
Storage
Best enjoyed immediately. Option to store any leftover onions in an airtight container in the refrigerator for up to three days. Extra cheese can remain in the jar sealed and refrigerated.
